Creamy, melty, and deeply comforting — these chickpeas and beans are everything I crave when I want something cozy and satisfying without spending hours in the kitchen. Toasty and flavorful, layered with sun-dried tomatoes, and finished with rich cheeses, this dish feels indulgent while still being built from simple pantry ingredients.

Serve it with crusty sourdough, spoon it over pasta, or enjoy it straight from the bowl. However you serve it, it's the kind of meal that has everyone asking for seconds.

Ingredient Notes

Chickpeas- become incredibly creamy as they simmer and absorb the flavors of the sauce. I like using the liquid from the can to add extra body and flavor.

Sun-dried tomatoes- add concentrated sweetness and richness that balances the cream beautifully.

Leeks- provide a gentle onion-like flavor that feels soft and sweet rather than sharp.

Mascarpone- melts into the sauce and creates an almost velvety texture. If you've never cooked with it before, this recipe is a wonderful place to start.

Parmesan- adds saltiness, depth, and that irresistible savory flavor that makes this dish feel especially satisfying.

Ingredients

Chickpeas & Sauce

  • 1 can chickpeas, undrained
  • 1 can cannellini beans, drained and rinsed
  • 1/2 cup sliced sun-dried tomatoes
  • 1 leek, thinly sliced 
  • 1 cup sliced baby bella mushrooms
  • 1/2 cup heavy cream
  • 1/2 cup vegetable broth
  • 6 ounces mascarpone cheese
  • 1 cup grated parmesan cheese
  • 4 ounces fresh spinach
  • 2 tablespoons butter
  • Salt, to taste (about 1 teaspoon)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon cracked black pepper
  • 1/4 cup fresh basil, sliced
  • 1–2 tablespoons all-purpose flour (optional)

For Serving

  • Toasted sourdough bread

Instructions

1. Sauté the Vegetables. In a large sauté pan over medium heat, melt the butter.

Add the leek and mushrooms and cook gently until softened, fragrant, and beginning to turn golden.

2. Simmer the Chickpeas. Add the smoked paprika, garlic powder, crushed red pepper flakes, black pepper, vegetable broth, chickpeas (with their liquid), and sun-dried tomatoes.

Bring to a gentle simmer.

Allow the mixture to cook until most of the liquid has reduced and the flavors have concentrated.

3. Build the Creamy Sauce.  Reduce the heat to low. Add the heavy cream, mascarpone, parmesan cheese, and basil.

Stir until the cheeses have melted and the sauce becomes smooth and creamy.

If the sauce feels thinner than you'd like, sprinkle in 1–2 tablespoons of flour and whisk until incorporated.

4. Finishing touches.  Stir in the kidney beans and Cook for another minute or two until the beans are heated through. Then add the spinach and cook for another minute until the spinach wilts.

Taste and adjust seasoning as needed.

Remove from heat.

5. Serve and Enjoy

Spoon into bowls and serve warm.

I especially love these chickpeas with crusty sourdough for soaking up every bit of the creamy sauce.

They're worth trying served over pasta, rice, roasted potatoes, or tucked into a warm wrap.


Chef's Notes

  • Leftovers keep beautifully and may be even more flavorful the next day.
  • Add a squeeze of fresh lemon juice before serving for extra brightness.
  • If you enjoy a little heat, increase the red pepper flakes to taste.
  • A sprinkle of extra basil on top makes the whole dish feel fresh and vibrant.
