Cozy Veggie Lasagna

Warm, nourishing, deeply flavorful, and endlessly comforting — this vegetable lasagna is layered with creamy béchamel, rich marinara, tender vegetables, and bubbling cheese. It’s the kind of meal that feels both grounding and beautiful, whether you’re serving it for a gathering or enjoying leftovers throughout the week.

Ingredient Notes:

Himalayan salt -Himalayan salt has its own distinct taste. If you’re using another type of salt, especially standard table salt, I’d start with closer to half the amount listed and adjust to personal taste. 

Mushrooms -Mushrooms give this lasagna a rich, hearty texture that makes the dish feel especially satisfying. As they cook down, they absorb the flavor of the sauce beautifully.

Spiced Cheese -I love using a slightly spicy cheese like habanero colby jack alongside mozzarella. It adds gentle heat throughout the dish rather than overwhelming spice in one bite.

Oven-Ready vs. Boiled Lasagna Noodles- Both work well here. Traditional boiled noodles create a slightly heartier lasagna with thicker, softer layers. They also stretch further since they expand while cooking. Oven-ready noodles save time and still turn out delicious. They also tend to create crispier edges and golden corners — which honestly might be my favorite part.

Cozy Garden Vegetable Lasagna Recipe:

Prep Time 35 minutes

Cook Time 75 minutes

Rest Time 45 minutes

Servings 6–8

Ingredients:

Marinara Sauce

  • 1 cup crushed or puréed tomatoes
  • 1 small can tomato paste
  • 1/2 green bell pepper, diced
  • 1 tsp Himalayan salt  
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup fresh basil, sliced
  • 1 can diced tomatoes

Béchamel Sauce

  • 1/4 cup all-purpose flour
  • 3/4 cup heavy cream
  • 1/2 cup water 
  • 1 tsp Himalayan salt  
  • 1/2 cup grated parmesan cheese

Vegetable Filling

  • 2 cups zucchini, quartered and sliced
  • 2 cups white mushrooms, sliced
  • 1 tsp Himalayan salt  
  • 1 bag spinach, roughly chopped

Lasagna

  • 8–10 cooked lasagna noodles (see chef notes at the bottom if you're using oven ready noodles)
  • 2 cups shredded mozzarella cheese Optional: 1 cup shredded habanero colby jack cheese to either add to the 2 cups of mozzarella cheese for extra cheesiness or replace one of the mozzarella cups)

 

Instructions:

  1. Prepare the Marinara In a saucepan over medium heat, lightly saute' the bell pepper. Add the puréed tomatoes, tomato paste, paprika, smoked paprika, cayenne, and red pepper flakes. Allow the sauce to simmer for 10–15 minutes, stirring occasionally, until slightly thickened and fragrant. Stir in the diced tomatoes and fresh basil. Taste and adjust seasoning as desired. The sauce should feel rich and spoonable — not watery.
  2. Prepare the Béchamel In a small saucepan over medium-high heat, whisk together the flour and half of the heavy cream, gradually adding the rest of the heavy cream and water. (The goal is to take it from a paste to a smooth sauce, whisking out any clumps as you go.) Cook gently, whisking frequently, until the sauce begins to thicken. (if the sauce is too thick, add a little water to thin it out). Once thick enough to coat the back of a spoon, stir in the parmesan cheese until melted and creamy. Remove from heat.
  3. Cook the Vegetables Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the mushrooms and zucchini. Cook until softened and lightly golden, about 5- 10 minutes. Remove from heat, add the spinach and cover. In a couple minutes, stir the veggies. the residual heat will be enough to wilt the spinach and keep it beautifully green.
  4. Assemble the Lasagna Preheat oven to 350°F. Using a 9x 13 baking dish (or a couple smaller baking dishes- this lasagna is very flexible) Layer the lasagna as follows: First Layer Béchamel Lasagna noodles Marinara sauce Vegetables Shredded cheese Second Layer Lasagna noodles Béchamel Marinara sauce Vegetables Shredded cheese Repeat until your baking dish is just under full. Finish with an extra layer of cheese on top.
  5. Bake Cover tightly with foil and bake for 75 minutes. Remove the foil and broil on high for 2–5 minutes, or until the top becomes golden and bubbling. Watch closely while broiling.
  6. Rest Before Serving Allow the lasagna to rest for 30- 45 minutes before slicing. This helps the layers set properly, flavors meld, and makes serving much easier. 

 

Chef’s Notes:

If using oven-ready noodles, make sure your sauce is slightly looser so the noodles soften properly while baking. (I do this by adding 2 -4 tablespoons of water to both the Béchamel and the Marinara sauce)

For the photo above, I used a medium large skillet and was able to make a mini lasagna on the side with spare ingredients.

I’ve tried many lasagna recipes over the years, and this one stands out above the rest. It’s hands down my favorite, and the only recipe I’ll be using from now on.
